Mini meatballs with potatoes

These are super easy and SO GOOD! You must try them, especially if you have kids.


Ingredients:

3-4 slices of bread, I am using organic white wheat
1/2 cup of organic milk
about 1lb of organic ground beef
1 teaspoon of sweet red pepper flakes, not the spicy
2 teaspoons of fresh or dry oregano
1-2 garlic cloves
salt to taste
flour
olive oil
organic crushed tomatoes, or tomato paste
water
1 dry basil leaf
2 medium potatos
2 carrots
fresh corn

In a bowl break up your bread in small pieces.

Add the milk and let the bread absorb all of it.

Now add your ground beef, all your spices and chopped garlic cloves.

Mix gently.
Form small balls, about the size of a golf ball or perhaps just a little bigger.

Lightly roll your meatballs onto some flour.


Place them in a large pot that has been already preheated with some olive oil.

Brown them on both sides on medium/high heat for about 3 minutes on each side.

Once they are brown add your crushed tomatoes, water and a little more salt.

Add your basil leaf

Now chop your potatoes, carrots and corn (I break my corn in thirds, you may cut them bigger or smaller)

Compost all scraps ;)

Yay! now add potatoes, carrots and corn in the pot.

Mix, lower the heat and cook for about 30-40 minutes or until veggies are tender. Serve HOT, you may serve this dish with rice, I like it just the way it is, you may also add peas or other veggies of your choice, this is what my family likes :)
