Stuffed zucchini

These were yum! so many options when it comes to filling....
Ingredients:

2 large zucchinis
6 slices of all natural thin cut ham, or turkey or chicken whatever you want
1/3 cup of parmessan cheese
butter for topping zucchinis.
2 tablespoons of white sauce
1 clove of garlic
oregano to taste
nutmeg to taste
salt and pepper to taste
1 tablespoon of fresh chopped parsley
1 egg


Wash zucchini and cook until tender, but not too tender in a large pot with boiling water.

If you need to make your sauce it's very simple. I only need a little so, 1 tablespoon of butter, melt in a pot, add 1 tablespoon of flour, mix well, add about 1/4-1/3 cup of whole milk, salt and pepper to taste.

Moving on, when your zucchini is done, cool down. Cut your zucchini in half across, and if they are big like mine cut in half right in the middle.

With a spoon remove "pulp" from the zucchini, these is the center.

Save the pulp, mix well and make sure to mash big chunks, remove excess water from the container.

Now remove excess water from your zucchinis by pressing a dry paper towel, the dryer the better.
Place zucchini in a pan that has been previously drizzled with olive oil. Chop your ham.

In a bowl mix all ingredients together, ham, egg, sauce, oregano, parsley, salt, pepper, nutmeg, pulp from the zucchini you previously removed, garlic, etc. Mix well. it will be a bit runny, don't worry. This is why you must remove all excess water.

With a spoon add the mix to the zucchini.Top with parmessan and a little butter.



Enjoy, my kids loved it, my husband not so much he asked me to serve this with raw zucchini next time! ha! he only likes raw vegetables.
