Beef Tortillas, quick and easy!

My kids were begging me for these today, they are really simple to make and super fast too! I serve this dish with fresh sliced tomatoes and cucumbers, you may serve this with any type of salad or fresh veggies you like.

Note: the fresh Jalapenos are from our garden! My husband ate them fresh like that, unbelievable! No slicing or dicing, he just took bites and enjoyed them fresh!

Ingredients:

1 can of whole kernel organic corn
fresh mozzarella cheese
1 pound of organic ground beef
fresh tortillas
salt and pepper to taste
1/2 tablespoon of oregano
1/2 tablespoon of sweet ground pepper
1 tablespoon of butter
1/2 spanish onion
1/2 poblano pepper

Preheat some olive oil in a pan.
Chop your onion and poblano pepper


Cook until onions are translucent. At this point I season my onion pepper mix with salt.

Add your ground beef.


After you break it down a bit season with salt and pepper to taste, and cook for a few minutes.

Now add the oregano and sweet ground pepper.

Cook for about 10-15 minutes, until your meat is brown and fully cooked with no red areas on sight.
Now add the can of corn, make sure you drained and washed your corn previously. Cook for a couple of minutes. Remove pan from heat.

I got fresh tortillas from the local mexican store, they are delicious!


In a non stick pan add 1 tablespoon of butter, or less.

Prepare your tortillas, this is how I do it. I take one and add some mozzarella cheese.

I add some beef and top it with some more cheese.

I then fold them in half and place them on the pan, if necessary stick a toothpick through the tortilla to hold it together.

Cook until golden brown on each side, serve HOT!
