Ensalada Rusa

This is a great potato salad to go along with meat during a bbq or anything else you are eating!
This recipe is by my mom and dad! thank you for letting me share this :)


3 big potatoes
2-3 hard boiled eggs
1 can of organic whole kernel corn
Salt and pepper to taste
1-2 tablespoons of mayo
Fresh parsley

Peel and chop your poatoes into small cubes.
Cook in boiling water until tender, not soft, you want this to be cooked but still a bit hard so that it keeps its shape.
Boil eggs, and chop
Mix potatoes, corn and egg, season to taste, add mayo or olive oil to dress your salad.
Sprinkle fresh parsley and eat warm or cold!
