Very traditional from Argentina, these are what I think tasty cookies than are perfect for tea, coffee or mate, I will talk about mate later on!
Ingredients:
1 1/4 cups (250g) of lard, I know...but this is what it needs!
1 1/4 cups (250g) of sugar
1 teaspoon of vanilla
2 eggs
2 teaspoons of baking soda
2 1/4 cups of flour
1/4-1/2 cocoa powder.
Add the lard in a bowl.
Incorporate the sugar
Add the vanilla
Mix ingredients by hand.
Add eggs, one at a time, add 1 egg, mix, add second egg and mix again.
In a separate bowl, add your flour. Incorporate the baking soda to your flour and mix.
Sift the mix on your working surface.
Form a crown and add the lard mix in the center. Incorporate the flour to the center.
Work the dough until you achieve a soft ball.
Cut your dough in half.
Take one half and form a crown. Add cocoa powder in the center, by sifting it on top.
Work your dough.
Until it is fully incorporated.
Roll each half just like so.
If its too long which for me it is, cut it in half. Twist the white with the chocolate like this.
Roll your dough until you obtain 1 long piece.
Cut your piece into 1/2 inch pieces.
Place them on a cookie sheet with some wax paper. Preheat oven to 325 degrees and bake for 25 minutes.
Let your Polvorones cool for at least 2 hours, serve with tea, coffee or mate!
