These delicious croquetas are so easy to make and it's great when you have leftover spaghetti, rice, spinach, whatever you can think off, the possibilities are endless!
In my case we had spaghetti so we decided to make some. I don't normally fry things but I needed to make something out of my leftovers :)
You may eat these with a fresh salad, some meat or whatever you like. We sliced some fresh peppers.
Ingredients:
Leftover spaghetti, rice, your choice.
1/4 cup of all purpose flour
1/2-1 cup of whole milk
3 eggs
1/4-1/2 parmessan cheese
1 teaspoon of pepper
1/2 tablespoon of salt
Vegetable oil about 3/4 cup.
Chop your spaghetti.
Toss spaghetti into a mixing bowl, add eggs.
Mix.
Add flour.
Mix.
Add milk, and mix again.
Add the parmessan cheese, and mix once again.
The consistency for the croquetas can be a little tricky, if you add too much flour they will be heavy, if you add too much milk they will be runny, as you can see of this photo we have achieved a consistency that is equal, you want to see some of that cream there so that you don't only chew on spaghetti but the dough as well, you have to eye ball it.
Add your salt.
And your pepper.
Once all the ingredients are well incorporated, preheat a pan with vegetable or corn oil.
With a spoon start adding your mix like this.
Cook on medium high heat for a few min, keep an eye on them, they cook fast! you don't want to burn them, once they are golden brown flip and cook on the other side.
Once they are cooked, place your croquetas in a dish with a paper towel, let the paper towel absorb the excess oil.
